Vaekst restaurant

Vaekst is a restaurant in Copenhagen that I deeply enjoyed. It is part of the Cofoco Food Collective and it is focused on vegetarian cuisine; however fish and meat have their place on the menu as well.

I made my reservation online, specifying my gluten intolerance, and they could happily accommodate me.

The place is so vibrant and beautiful… large street windows make the Nordic light gentle come in, there are plants growing lusciously everywhere and the wooden tables make it warm and welcoming.

The staff is really friendly and that creates a quite cosy atmosphere.

I chose to taste a 3 courses meal which included also gluten free bread.

My starter was baked hake with turnips, fish fume, dill oil and shiso.

My main dish was seared halibut with eggs, mussel sauce, kale, edible flowers, potatoes and salad.

So good and generous! The fish was perfectly cooked and the veggies beautifully seasoned.

My dessert was a delicious raspberry sorbet with pistachio crumble and white chocolate: the perfect end to a wonderful meal.

With what I consider to be a very good value for money, Veakst is a place that I do recommend you to visit if you are planning a trip in Copenhagen.

Danish cuisine is cooked and presented with a contemporary approach, but it stays authentic and real, no fancy stuff, just good, heartfelt food the way I like it.
