Yesterday I was working in Paris 10th arrondissement and made a happy new discovery: Bulliz!
Bulliz opened just two weeks ago and it is a coffee shop specialised in choux, both sweet and savoury and the good news for us, gluten free eaters and lovers, is that the savoury ones are, well, gluten free!


At the reins of this family run-business, Fanny, Lydie and her husband Mathieu who is the pastry chef behind Bulliz yummy choux recipes.
The gluten free savoury ones are made of corn and buckwheat flours, they have the shape of a panini and are called « Gougère ».
You can buy them both natural or stuffed with delicious ingredients.
I had one for lunch called « Le chou mon fumé » with artisanal smoked salmon by Karl Moose’s from Moosessmokehouse, a true specialty, seasoned with cream cheese and dill, cucumber, salad.
I loved it!


I also had a fresh juice with orange, red berries and grapefruit.
I liked the design of the place as well: so colourful, cheerful, and welcoming.
Hope one day to find available also gluten free sweet choux but in the meantime, I know I will be enjoying the Gougère ones :). Voilà Bulliz, or … « les choux sans chichis » !
