Chiara: Why gluten free?
Natalie: Although I’m not gluten-free myself, I always do my best to label the gluten-free recipes I create and think of gluten-free alternatives where I can. I suppose having been vegetarian for so long, I understand how hard it can be when people can’t or won’t accommodate you so I do my best to be accommodating on my blog.
Chiara: What is The Tofu Diaries?
Natalie: The Tofu Diaries is my space to share the things that I love the most: food and travel! I’m always trying new things and exploring new places, so I hope I can inspire others to do the same – in a compassionate, animal-friendly way.
Chiara: What is the gluten free food that you loved the most?
Natalie: I love how gluten-free food sometimes means more veggies in a meal, so cauliflower rice has to be up there for me!

Natalie: Not about compromise! I think it’s amazing the creative things a lot of gluten-free food bloggers out there are doing to make things a lot tastier for a lot of people.
