Who are Rice Trotters?

Today we get to know Rice Trotters a bit better. Rice Trotters is take away restaurant in Paris that is specialised in rice: everyday they celebrate this naturally gluten free grain by cooking it in many ways and forms and from breakfast till lunch, you can have fully enjoy it. Laurianne, co-founder of Rice-Trotters along with her partner Anthony, answers to our questions.

Chiara: Why gluten free?

Laurianne: Both Anthony and I are not sensitive to gluten, at the beginning it was a little bit by accident that we came up to gluten free because we decided to focus our project on rice that is naturally gluten free. Then we discovered that people who have allergies or are sensitive to gluten often had hard time to find good food to eat, so it became an important issue to us and we decided not to have gluten get into our kitchen. The only ingredients that we use that are not gluten free certified, so not free of cross contamination with gluten, are the soya sauce and the spices but we are looking for suppliers that have them gluten free labelled.

Chiara: What is Rice Trotters?

Laurianne: It is a concept around fast “good” food, as we shall put it, and we have chosen to concentrate on one ingredient: rice. This small grain is so versatile in the kitchen. We use and cook rice in many different ways: as milk, grain, flour, noodles. With it we make desserts like our “Mirlitons” that are delicious muffins with both rice and almond flours. We also prepare many savoury dishes using only fresh ingredients that we cook for our clients in our kitchen every day and whose recipes are inspired by culinary traditions from all over the world. Both Anthony and I are passionate about travels and we got inspired by the places we visited. Anthony is a chef and he runs his own restaurant, L’Apibo, and he wanted to create something easier for lunch. Before starting Rice Trotters, I was working in the marketing department at Danone. We met two years ago and starting from then, we got thinking about the place we wanted to open, how we would like it to be, what we would love to cook that could please both ourselves and our future customers. With Rice Trotters we want to propose food that is healthy, nourishing and tasty.

Chiara: What is the gluten free food that you love the most?

Laurianne: Our desserts like the “Mirlitons”. If I am not talking about rice then, I like quinoa especially the quinoa couscous that I make at home – I think it tastes even better than the one prepared with wheat.

Chiara: Gluten free is…

Laurianne: “Riz-golo”, (funny in French), tasty, and easier to cook than what we can imagine.

Chiara: What is Rice Trotters next challenge?

Laurianne: We recently launched our gluten free 100% rice breakfast that we would love to develop more in the future by adding new products. We serve it from 8.30 till 11.00 am everyday and after it’s lunch time!
