Today we get to know a bit better Via dalla Spiga (once Ouf of Gluten), a beautiful gluten free pastry shop in Milan. Roberta Maranzana, founder, answers to my questions.
Chiara: Why gluten free?
Roberta: In Milan there were a few shops that offered fresh, gluten free food and they were not like the shop I had in mind. I wanted to create a beautiful, bright, joyful place with fresh gluten free food, good to eat but also beautiful to see. To me gluten free is good for everybody, coeliac people and not. Everybody is welcomed at Via dalla Spiga.
Chiara: What is Via dalla Spiga?
Roberta: It is a philosophy, a lifestyle. We sell both confectionary gluten free products from selected gluten free brands but most of all, our core business is our range of fresh gluten free products that we bake every day. We have a pastry chef, Luca Musitelli, that concocts new recipes for us. We offer an extensive range of fresh gluten free cakes, croissants, bread, pasta, pizza and focaccia, tarts, choux, cheesecake, quiches and so much more. Some of our products are also lactose-free. Via dalla Spiga is also specialised in gluten free catering.
Chiara: What is the gluten free food that you love the most eating?
Roberta: Our gluten free fresh pasta. I am not coeliac and when I eat our fresh pasta like the “ravioli genovesi” I feel lighter, and I think that they are even better than those I can eat with gluten. I also love our “ventaglietti” made of fresh gluten free puff pastry (pâte feuilletée).

Roberta: It’s a bet, a challenge. And it is good for everybody.
