La Locanda del Pentegallo in Turin makes some of the best gluten free pizza that I have ever tasted. Andrea and Dante, co-founders, master pizza chefs and long time friends, have been working on gluten free since 14 years now. Today we get to know them a bit better.
Chiara: Why gluten free?
Andrea: Because in this way everybody can eat, share and enjoy the same food: celiac, people who are intolerant or sensitive to gluten and those who are not. If you are celiac for example and you would like to taste what your friend or sweetheart has chosen, most of the time you can’t because unless he or she chooses not to eat gluten, a celiac person cannot eat that same food. At the Locanda del Pentegallo they actually can because everything we make is gluten free and safe from any cross contamination with gluten.
Furthermore from Tuesday to Thursday we organize the “Giro pizza”: clients can come and order one pizza so to start. We cut it in pieces for them and everybody can have a slice. Then they can order another pizza and so on. Until they say stop. “Giro pizza” costs just 12 euros per person.
Chiara: What is La Locanda del Pentegallo?
Andrea: It is mainly a gluten free pizza place: we have over 80 different pizza flavours on the menu. However we propose also burgers with our home-made gluten free bread, French fries, crepes, risotto and desserts.
Chiara: What is the gluten free food that you love the most?
Andrea: The hazelnuts cake that is typical from Turin and the Piemonte region, I make one for La Locanda del Pentegallo quite regularly. I like our gluten free pizza too.
Chiara: Gluten free is…
Andrea: Light and a new way of eating. It is light for everybody as gluten free grains and flours are easier to digest. It becomes a new way of eating for those who are celiac, intolerant or sensitive to gluten as they have to change the way they eat and by doing it they atcually discover new flavours and foods.
