
Today we get to know Keïli a bit better. Caleigh a.k.a.Keïli, founder of Keïli along with her associate partner François – answers to our questions.
Chiara: Why gluten free?
Keïli: I am coeliac and I noticed that in Paris there weren’t many choices of fresh gluten free food. Also I didn’t like the fact that gluten free was so often associated with the coeliac disease. To me gluten free is about taste, gourmandise, and colours. I wanted to propose more fresh gluten free options.
Chiara: What is Keïli?
Keïli: It’s my name. Actually you should write it “Caleigh” but you read it “Keïli”. The brand name is my phonetic name. I wanted to create something that looked like myself. I am American but I have been living in France for quite a while now. First I worked for the brand Marlette where I created their gluten free cake mix and now I have launched my own that is specialised in gluten free food catering.
Chiara: What is the gluten free food that you loved the most?
Keïli: A gluten free pizza that I ate in the U.S.
Chiara: Gluten free is …
Keïli: Freedom. Like in the word free. You can eat everything you want and you can make everything you want. It’s about sharing healthy, tasty food with everybody.
