Today we get to know a fantastic gluten free, organic and vegan bakery in Berlin: Jute Baekerei. Freda v. Gilsa – co-founder along with her husband Friedrich – answers to our question.

Chiara: Why gluten free?

Freda: Some years ago I discovered that I was sensitive to gluten, eggs, and milk while my husband found himself allergic to gluten. We came up with the idea to open a bakery because to us that was missing in Berlin: a place where you could find 100% gluten free fresh hand-made baked bread. At the beginning Friedrich and I started to make our own bread, then we met Guido Tauer, a professional baker since four generations, we talked to him about our idea, he got enthusiast about it and decided to join us. We have become good friends since then and launched Jute Baekerei together. Today we work with Danielle as well who has joined us on this adventure and helps me managing Jute.

Chiara: What is Jute Baekerei?

Freda: We opened Jute Baeckerei in September 2014. The name Jute is a play on word: in Berlin dialect “Jut” means “good” but “Jute” is also a fabric, a natural, organic one that we often use here and we make our bags of. It is also displayed as background on our website. At Jute we sell fresh baked bread that is gluten free, organic and vegan: that means that everything we make is also lactose-free and eggs-free, including our pastries. We privilege products that are seasonal and locally sourced. When some bread is not sold during the day, we give it to Food Sharing, a wonderful project that thanks to the help of volunteers delivers food to people with lower incomes.

Jute Baeckerei is also a coffee shop where you can sit, relax, read magazines, listen to music and of course drink a good cup of coffee. We wanted to create a place that could welcome everybody. This is why we chose to take care of people’s different food allergies and choices, we wanted them to feel good and not different because of their specific needs.

Chiara: What is the gluten free food that you loved the most?

Freda: It’s here! I work here and spend most of my time at Jute. I love eating what we do. The first time I tasted our bread, I was so happy to eat bread that “tasted like bread”! I also love French galettes made of gluten free buckwheat.

Chiara: Gluten free is…

Freda: Joy! It is also becoming more aware about the food I eat. I remember that when I discovered I was sensitive to gluten, I started to study a lot about gluten free. Nutrition and education are very important. At Jute, we often organize meetings and workshops with doctors and food specialists for our clients to let them discover important topics like why wheat has changed in years and so much more.
