Here it is my interview to a bright, beautiful woman: Céline, founder of one blog that I love, French Zest. Céline is a mix of passion for great food, seasoned with gluten free flours, a sprinkle of good humour and tons of creativity.
Chiara: Why gluten free?
Céline: Because I had some health issues some years ago that forced me to exclude gluten and lactose from my diet. However I am very fond of discovering new ingredients in the kitchen! Going gluten free opened up the door to a whole new world of possibilities! There are so many gluten free flours that are utterly delicious.
Chiara: What is French Zest?
Céline: It’s a story of passion and curiosity for food. It grows thanks to the people I meet (family, friends, newcomers…) and also what I like. Today I am aware of the importance of associating good health and good food. It is key when we cook or develop a recipe, to choose ingredients that contribute both to our wellbeing and give us pleasure. This is why I created a website where I share recipes, pieces of advice, tips and tricks that are accessible to everybody, especially to those who are facing a « free from » diet. I want my recipes to be healthy, good, and creative. French Zest is about sharing, it’s about pleasure and recipes that are able respond to people who have different food issues.
Chiara: What is the gluten free food that you love the most ?
Céline: There are many that I love and it is difficult for me to choose. But I can say that it would be the bread with seeds that I made. It is tough to make gluten free bread. Here it is my recipe : http://www.frenchzest.com/home/83-pain-aux-graines.html

Chiara: What’s your next challenge?
Céline: Continue to develop French Zest, I would love to translate it in English.
I would love to develop a range of gluten free mix for cookies and cakes, without gums and refined sugar.
