Sweet Frittata

I love this gluten free recipe: a sweet frittata so simple to make and yet so full of taste. Every time I visit my family in Sorrento, I ask my brother Francesco to make one for me. Besides I love cow ricotta cheese. Fresh, light, perfect in summer as well as in winter.

Let’s take a large bowl, add the eggs and the sugar and start mixing them with an electric beater.

Add the ricotta cheese and continue to beat. Once the ingredients are perfectly mixed, turn the electric beater off.

Chop the chocolate in small bits and add it to the mix along with the grated skin of two fresh oranges. Mix gently with a spatula.

Pre-heat the oven to 180°.

Take a round cake pan, butter it well, and then use the rice flour to flour it.

Pour the mix into the cake pan and place it into the oven for about 30 minutes.

Serve it warm.

I love the softness of the frittata along with strong flavour the dark chocolate and the sweet of the oranges. It is really delicious.

– 250 gr ricotta
– 2 eggs
– 50 gr caster sugar
– the grated skin of 2 oranges
– 50 gr dark chocolate (70%)
– butter and rice flour for the pan
– cake pan cm 20 (diameter)
