Yummy and gluten free!

Here it comes a recipe to make delicious gluten free cookies with chocolate chips and hazelnuts. It’s Claire from the beautiful blog Chartres sans gluten that made it for Baci di Dama and I am so grateful! These cookies are delicious and really easy to make. Grazie Mille Claire!

Melt the butter with the salt.

Add the sugar, the vanilla powder, the egg, the rice flour, the yeast in a large bowl and mix.

Grind the hazelnuts but be careful to reduce them in small pieces, not powder.

Add the hazelnuts to the batter and mix.

With the help of a knife, cut the chocolate in small pieces.

Add it to the batter and mix.

Take a baking tray, place some greaseproof paper on it, put some of the batter on it, the shape of an apricot, press it a bit on top and be careful to leave some space in between one and the other.

Bake the cookies at 190°, in a convection oven, for about 10 minutes.

Let the cookies cool down.

You’ll see, they will be crunchy outside and deliciously moist inside.

For about 12 cookies
100 gr butter or margarine (better if organic)
2 pinches of salt
80 gr red or blond sugar
1 pinch of vanilla powder
1 egg
120 gr rice flour
¼ yeast from a 7 gr package
100 gr hazelnuts
200 gr dark chocolate
