PNY a.k.a Paris New York is a three venues restaurants in Paris that is specialised in quality burgers. Starting from June 2015, they have added a gluten free burger to their menu called “Le François”. Yuppy !!

The recipe is concocted by food critic François Simon and Dwichtorialist who chose to marry Asian flavours with the delicious beef by Le Ponclet, one of the best in France. I invite you to discover the story of this farm niched in the Bretagne region, I have been looking at their website right now and got inspired and fascinated by what they do and how they do it.

This gluten free burger is the best that I have eaten so far. The beef is incredibly good, the meat is grinded the moment you order it, so it’s super fresh and tasty.

François Simon chose to replace the usual cheese with avocado, shiso leaves, pomegranate seeds, ginger, candied lemon and salad. I loved the combinations of sweet and savoury flavours. It is a delicious recipe. Bravo!

The gluten free bread is fresh and created by Rachel’s cake for PNY. I liked that the bread was a little “brioché” and so soft.

The French fries are the cherry on the cake: they are fresh, not frozen, and home-made.

Besides the place is very nice and friendly, I do recommend to go and try this fantastic burger, “healthy but bitchy” as François Simon stated. The right combination of ingredients that makes it so irresistible!
