I lived in Rome for many years and in Rome people have learnt to make their own pizza, meaning that they have re-invented a different dough from the classic Neapolitan pizza: it is thinner and more crunchy. In time people started to call it “Pizza alla Romana” to differentiate it from the other pizzas.

This one is the best gluten-free pizza in the city that I can recommend so far and one of my favorite: a delicious combination of mozzarella cheese, bresaola, fresh arugula and parmesan flakes.

The restaurant is called Da I Sandri and is located in the heart of old Rome: Trastevere. Actually Trastevere is one of the oldest neighbourhood and I have always been told the true Romans are those that come from there, well… from 7 generations!

This is not Naples… also in Trastevere people use to dry their clothes outside and let them hang and swing colorfully in the streets.

I ate this gluten free pizza during summer last year, I feel always welcomed at I Sandri, the master pizzaiolo showed me how he prepares the pizza and it was fascinating for me to observe his moves: how he kneads the dough, the art of spreading it down, the ability of sliding it rapidly into the oven and check out when the gluten free pizza crust reaches that golden brown color that means it is perfectly baked and ready. Well, he gives the rhythm, he makes the music.

If you decide to go there, don’t forget to walk to the Gianicolo afterwards taking the via Garibaldi, that’s what I did last time and it was magic.

The Gianicolo is one of the seven hills of the city of Rome and from there you can enjoy one of the most breathtaking views. Also, up there, there is the American Academy in Rome where I worked, it is a wonderful place to visit, each year artists can apply and gain one year scholarship; they often display exhibitions that are totally worth the trip.
