“Morbidosa” gluten free cake

For the section “The blogs that I love’, here it is one super easy, super yummy gluten free cake called “morbidosa” , that is “softy soft” in Italian. The author is an Italian and talented gluten free cook, Alice, whom I happen to know after I got stuck on the photos of her beautiful Instagram account called Alice Noglù Kitchen. Alice has a real passion for cooking and since she got married, she’s started cooking gluten free for the love of her husband who can’t eat gluten. For Alice, you cook only for love and looking at her cake…it shows! Hope you will enjoy it.

INSTRUCTIONS

Beat the eggs with the sugar and the vanilla until the mixture becomes smooth.

Add the sieved flour, the potato starch and the baking powder little by little, gently stirring from bottom to top.

Beat the cream in a separate bowl and add it to the mixture making the same slow movements as above.

Take a baking pan. Grease it. Sprinkle some rice flour all over it and check that the rice flour has thoroughly covered the entire surface.

Pour in the batter.

Pre-heat the over to 180° and bake for about 35 minutes.

Check with the point of a knife to see if cooked.

Decorate as it most pleases you and… have fun with it!

– 200 gr rice flour
– 50 gr potato starch
– 250 gr caster sugar
– 3 eggs
– 250 gr fresh liquid cream
– 8 gr baking powder
– seeds from half a vanilla bean
