Recently I discovered a new address in Paris: a bakery called “Les Berlingots d’hier” in the 14th arrondissement that is also specialised in gluten free bread, tarts and brioches. Everything is prepared fresh everyday using only the best ingredients.
As Catherine, founder and one lively, passionate woman I must say, explains me, the concept behind her bakery is to combine health and pleasure. She is the only one in Paris to bake bread that has just 2% of gluten, it requires 72h of work and it has a very low glycemic index too. At the same time she has created a space apart where she makes only bread and tarts completely free from gluten. The oven unfortunately is common space for gluten and gluten free but she makes her best to clean it properly. The bread is made of rice flour: white and brown. I enjoyed the whole brown rice one along with the gluten free brioche! The brioche is actually Catherine’s specialty and after tasting it, I do recommend it, it is super yummy!
By the way, Catherine bakes also bread for diabetics. What can I say?? She is unbeatable!
For special events, Catherine always makes special bread and tarts and this year, for Christmas, there will be some great gluten free bread available! The collection is called “The three kings”. So we will have the bread called “Orient” with figues, dates and spices; the “Occident” with apricot, cranberries and candied hazelnuts and the “Made des îles” avec lemon, orange, papaya, vanilla and candied peanuts. What a super Christmas gift!
