Fresh gluten free tagliatelle easy recipe!

Today I am super happy to share with you a fantastic and easy to make recipe for some fresh Italian gluten free tagliatelle!

It’s Valentina, our talented Italian chef at Baci di Dama, who has concocted it. Valentina has learned to make fresh pasta with her grand mother since she was little and looking at her working the dough, well, it’s just so beautiful …!

Together we decided to make these tagliatelle with some super food and chose to add the spirulina: this natural algae is jam packed with precious benefits for our health like protein, antioxidants, and B-vitamins.

So let’s start…! You will see, it is easy and most of all, fun!

INSTRUCTIONS

To make the fresh past, start by mixing all the dry ingredients in a large bowl. Pour them on a kitchen table, make a hole in the middle, add the eggs and the olive oil, start to mix with the help of a fork. Start mixing with your hands until you have a solid dough that does not stick to your hands.

If the dough feels humid, add a little bit of rice flour; if the dough feels dry, put a little bit of water on your hands while keep mixing it.

Wrap the dough in a plastic film and place it in the refrigerator for 15 minutes.

Start preparing the sauce: add the olive oil and the garlic in a pan; let it fry on low heat for a couple of minutes until it turns gold. Add the cherry tomatoes that you previously cut in two halves. Add some salt and pepper and cook them on high heat for a couple of minutes. Turn the heat it off. Add the fresh basil, rocket and the pine nuts.

Take the dough out of the fridge. Pour some rice flour on the working table. Cut the dough in different pieces and start rolling it thin (but be careful not too thin, it does not have to break) with the help of a rolling pin or a pasta machine.

To form the tagliatelle, either you cut them with a kitchen knife or a pasta machine.

To cook them, take a large saucepan, add lots of water, bring it to boil, add the tagliatelle and let them cook for about 4 minutes, taste to see if ready. Drain all the water, add the tagliatelle to the sauce, stir and …

For 4 people
For the fresh pasta:
150 gr whole rice flour
150 gr buckwheat flour
3 eggs
1 coffee spoon of extra virgin olive oil
1/2 coffee spoon psyllium
1 coffee spoon spirulina
1 pinch of salt
For the sauce
2 cloves of garlic
400 gr cherry tomatoes
1/2 coffee spoon of salt
10 leaves of fresh basil
20 leaves of rocket / arucola
4 table spoon of extra virgin olive oil
1 handful of pine nuts
