Let’s cook Italian homemade tagliatelle!

Today Valentina, our talented Italian chef at Baci di Dama, shares with us a very easy recipe to make delicious Italian gluten free tagliatelle with tomato sauce. Besides we love a good Pasta Therapy atelier, it’s fun and it’s good. Let’s start then!

INTRUCTIONS

Put all the ingredients in a large bowl and start mixing them with the help of a fork.

Then place the mixture on a kitchen working table and continue mixing with your hands until you get a smooth dough.

If the dough gets too humid add a little bit of flour or if it gets too dry, put some warm water on your hands and keep mixing it.

Wrap the dough in a film wrap and let it rest for 15 minutes.

Start cooking the sauce.

Take a large frying pan, add the onion cut in thin slices and the olive oil.

Cook over low heat until the onion turns golden brown.

Add the tomato sauce, the salt, half of the basil and let it gently cook for about 10 minutes.

When ready, turn the heat off and put it aside.

Unwrap the dough, roll it and cuti it the help of a pasta machine or a rolling pin + knife and form the tagliatelle.

Take a large pot, add water, bring it to boil, add a pinch of salt and then the tagliatelle.

Cook for about 4 minutes.

Once ready dispose the tagliatelle in two dishes, add the sauce, the fresh basil and some parmigiano reggiano if you like it.

Ingredients

For two people
For the tagliatelle:
180 gr semi-whole grain rice flour (or white)
2 eggs
1/2 coffee spoon of extra virgin olive oil
For the sauce:
1/2 white or yellow onion
450 gr tomato sauce
1/2 a pinch of salt
10 large leaves of fresh basil
4 table spoons of extra virgin olive oil
