One great gluten free recipe by Because Gus!

Today Because Gus has chosen to share with Baci di Dama its recipe to make an easy and yummy gluten free galette des rois. The galette des rois is a typical French cake that is made with almonds and exclusively during Christmas and New Year’s holidays. It hides a surprise inside 😉 Let’s have a look at this gluten free recipe together!

INSTRUCTIONS

For the «frangipane» cream that we will use to stuff the Galette des Rois with, mix the sugar, the butter, the almond powder, two eggs in a big bowl until you get a smooth, creamy dough.

Add the fava bean inside and mix one more time.

Take the 2 gluten free flaky pastries and roll them separately on a kitchen working table.

Form a ring shape.

The flake pastries have to be not too thin otherwise the frangipane cream can pour out during the baking process.

Pour the frangipane in the middle the first flake pastry ring, put somme egg white on the borders, then add the second ring on top and press the borders with your hands to stick the two well together.

Brush the Galatte des Rois with some egg yolk before putting it into the oven.

Draw a square pattern on top with the help of a pointy knife.

Bake to 220° C for 20 minutes.

  • 120g sugar
  • 120g de butter (or margarine for a lactose free version)
  • 120g almond powder
  • 2 gluten free flaky pastry
    (in France Because Gus suggests Nature & Cie or Croustipate brands)
  • 3 eggs
  • 1 fava bean
