Today I would like to share with you the recipe to make some delicious gluten free, vegan pizza. I asked Roberta, from one Italian blog that I love Dal ricettario di Roberta to propose one as Roberta is specialised in gluten free bread and pizza.

When I created my blog, Baci di Dama Living gluten free one year ago, I did it with the intention of showing also the work of other people – besides mine – who are doing great things on gluten free. Roberta is one of them.

INSTRUCTIONS

FOR THE MIX:

Start by mixing all the flours together, along with the guar gum, in a large bowl.

FOR THE PIZZA DOUGH:

Add the flour mix, the yeast in small pieces, the water, the extra virgin olive oil in a kneading machine bowl.

Mix everything together at medium speed, for about 5 minutes.

Add the salt while mixing the ingredients.

Pour the dough in a large bowl and cover it with some plastic wrap

Let it rest at room temperature for 30 minutes.

Put it in the fridge at a temperature of 5-6° C for 24 hours.

The day after take the dough our of the fridge and let it outside at room temperature, without the plastic wrap, for 2 up to 3 hours.

Grease a baking tray or smaller tins with extra virgin olive oil.

Place the dough on it, grease your hands the same way and stretch gently the dough until you get a thin pizza, the shape the you like it.

Add the tomato sauce, some mixed herbs or any other ingredients of your choice. Drizzle some extra virgin olive oil on top et now …in the oven!

Don’t forget to pre-heat it to 250° C

Bake the gluten free pizza for 9 minutes if you are using small tins to make small pizzas or for 14 minutes if you have chosen one large tin to make one big pizza.

Ingredients:

For 4 people
4 small tins – 10 cm diameter each
1 large tin 30×40 cm
Flour mix:
190 gr refined rice flour
140 gr refined corn flour
40 gr white teff flour
130 gr tapioca starch
10 gr guar gum
Pizza dough:
our flour mix
400 cl water
4 gr fresh yeast
20 cl extra virgin olive oil
12 gr salt
