This morning I went straight for French toasts. I am working on some delicious gluten free brioche bread recipe and what to do with the leftovers…? Gluten free French toast!
This recipe is for one/two persons but you can double the amounts if you need more.
I love French toast: it is such a simple recipe, yet so tasty and easy to make.

Step 1:
Crack one egg in a bowl and start to beat it with a fork along with the salt and the sugar. As an alternative to the classic caster sugar, I used coconut sugar. It has a low glycemic level and it is very flavory. To me, they both work beautifully for this recipe.
Step 2:
Add the vanilla seeds from the bean, pour the rice milk and continue to whisk until thoroughly blended.
Step 3:
Dip the brioche bread slices in the egg mixture and allow both sides to soak up in it.
Take a large pan, put butter and over medium heat. Add the brioche bread. When one side turns golden brown, flip it and let the other get the same colour.
Step 4:
Enjoy them the way you like it the most: I went with a dusting of powdered sugar and fresh fruit. Yummy!

For 4 small slices of gf brioche bread
– 100 gr rice milk
– 1 egg
– 1 full tablespoon of caster sugar
(or 1 full tablespoon of coconut sugar)
– a pinch of salt
– half vanilla bean
– 1 tablespoon of sweet unsalted butter
