Sweet gluten free Christmas

Today I am very happy to share with you a very easy recipe to make delicious gluten free Christmas cookies!

The recipe has been imagined by a friend and talented Italian cook Roberta from the blog Dal Ricettario di Roberta.

INSTRUCTIONS

In a kneading machine add the butter previously cut in small pieces, the sugar, the cinnamon, the egg white and the flours.

Mix until the dough will start to crumble, then lower the speed until you get some smooth dough.

Place the dough in a cooking wrap and let it rest in the fridge for at least 20 minutes.

Take it out of the fridge, sprinkle some white rice refined flour on a kitchen table, place the dough on it and roll it with the help of a rolling pin.

Cut your biscuits the Christmas shape you like the most.

Take a baking tray place some greaseproof paper on it and then the biscuits.

Bake them in a pre-heated oven to 180° C for about 10-15 minutes.

Ingredients

For 2 baking trays 30×40 cm each
  • 110 gr whole rice flour
  • 20 gr corn flour
  • 20 gr tapioca starch
  • 120 gr butter
  • 40 gr icing sugar
  • 1/2 coffee spoon cinnamon
  • 1 egg white
  • a pinch of salt
