Love Banana Bread !

Today I am happy to present you the recipe of one of my favourite gluten free cakes: the banana bread!

As you might know it already, with my blog Baci di Dama Living gluten free, I love to share the work and the achievements of other people working hard inside the gluten free business, to make it fun, playful and above all good!

So today it’s the turn of a talented French chef: Céline Lebrun.

Céline has recently launched her blog called www.sansglutenetsansreproches.com

This week she created the recipe of her banana bread that comes with coconut oil so it’s also lactose free.

Another good reason to be happy about!

INSTRUCTIONS

Preheat the oven to 180°C.

Peel 3 bananas and squash them with the help of a fork in a large bowl with 20 gr of sugar, plus the green lemon

In a food processor mix the coconut oil with the sugar.

Add the eggs, the yoghurt, and bananas.

Mix all the ingredients

Then add the flour, the baking powder and soda, the cinnamon and the salt.

Mix again.

Cut the other banana into long slices, by being careful not to break it.

Grease the cake tin with some coconut oil, add the banana cut in two, pour in the mixture.

Bake for about 30 minutes at 180°C and then for 45/50 minutes at 160°C.

Check that it is dry and ready with the help of a toothpick.

Cool it down before serving.

Ingredients

Cake tin 28×11 cm
  • 4 ripe bananas
  • 180 g brown rice flour
  • 70 g coconut flour
  • 150 g brown cane sugar
  • 146 g coconut oil
  • 150 g soya yoghurt
  • 2 eggs
  • 1 green lemon
  • ½ coffee spoon of cinnamon
  • 1 little sachet of baking powder
  • 1 coffee spoon of baking soda
  • 1 pinch of salt
  • a few drops of vanilla extract
