I am so honoured that Beyond Bread in London, a bakery and coffee shot that I love so much, has shared with Baci di Dama a Christmas recipe to make delicious gingerbread cookies. You will see, the recipe is easy to make and it is yummy … well, I ate Mr… hope he won’t mind 😉

Combine the butter, caster sugar and brown sugar in a mixing bowl until the sugar is dissolved into the butter

Add the treacle and mix for couple of minutes

Add the flour, baking powder and all spices little by little until this forms a paste

Finally mix in the eggs

Fold the dough in cling film and keep refrigerated for a minimum of 2 hours before rolling out and cutting your shapes

Baking time: 15 min at 160c in a fan oven

gluten free gingerbread cookies recipe


 – 250 gr butter
– 100 gr dark brown sugar
-100 gr caster sugar
-80 gr whole eggs
-570 gr gluten free flour mix
-7,5 gr baking powder
-12,5 gr cinnamon
-12,5 gr ground ginger
-200 gr black treacle
-10 gr xanthan gum (to add only in case your flour mix is already gum free)
