Flax and Kale is a restaurant that’s quickly become the green, healthy, yummy-licious “spot to be” in Barcelona.

Close to the Square Universitat, Flax and Kale proposes a flexitarian approach to food meaning you can find some animal proteins like oily fish (rich in Omega 3) and eggs for weekends’ brunch, cooked warm dishes but also vegan, raw and vegetarian foods. Actually 80% of the menu is.

Gluten free and paleo options are also included on the daily menu, both for breakfast, brunch, lunch and dinner.

Open 7/7 days a week, 24h a day, with 3 venues in the city up-to-date, Flax and Kale welcomes everyone for whatever desire you might have during the day showing that eating healthy can be tasty and good.

This translates also with the fact that it is very, very quickly full so be prepared to wait a little or to book your table in advance.

Daily cold pressed juices and smoothies are available in many flavours and colourful recipes.

The mastermind, recipes developer, book author and business genius behind this project is Teresa Carles, and her family.

Teresa Carles is a successful vegetarian chef and a pioneer in Spain considering the fact that she opened her first vegetarian restaurant in Catalunya in … 1979! At that time no one was cooking that food. She later opened her homonymous restaurant in Barcelona; a reference in town if you want to eat vegetarian cuisine.

After years of travelling abroad, it was actually her son Jordi who got inspired by the healthy food vibes he could witness in the United States and in California, in particular… the food his mother has been cooking for years was highly celebrated there!

So when he got back to Spain he decided to create a place where this food could become the most appealing to a large audience and that’s how Flax and Kale was born…!

Needless to say I loved the project so much I went there at least three times during my stay.

I did enjoy the brunch that came with scrambled eggs, salad, veggies, gluten free bread and one delicious fruity granola bowl. You can actually pick the dishes you want and compose your brunch.

I have to say that the food I did enjoy the most was the raw bowl: the veggies were perfectly seasoned and the hummus…oh my… the best I have ever tasted ! I tried the charcoal, the beetroot, the turmeric hummus, they were all so delicious!

The homemade paleo gluten free bread was very tasty and the vegan butter… to die for! It had the consistency of “real” butter … bravo to Teresa Carles for this fantastic achievement!

For dinner I took wild salmon and it came with a large portion and was definitely good.

The energy balls felt like truffles while they slowly melted into my mouth… I didn’t try the açai bowl or the raw gluten free cakes but they did look tempting to me.

The restaurant design is just breath-taking: high ceilings, large windows, roof garden and ladies, well, our “room” is also something to see and to be seen (…selfies hello 😉

One last word… for the world curious, mindful Foodie that I am… Can’t wait to be back to try more dishesn the menu is SO big…!
