Today let’s virtually meet an Italian gluten free cook called Federica De Vincentiis. Federica and I met via Instagram – I love when social media lead you to beautiful discoveries. Federica has a real passion for cooking and since she discovered she had celiac disease, as for many of us who have experienced that same health issue, she set the challenge to create great gluten free recipes and enjoy good gluten free food for her, for her family, for everybody. Here Federica tells us a bit more of what she loves.
Chiara: Why gluten free?
Federica: I discovered I had celiac disease four years ago. My sister was diagnosed with it early on, so before I knew I was celiac too, I was already trying to make recipes for her, to cook food as good as that with gluten. Cooking gluten free requires commitment, it can be tiring sometimes but when you finally make it, it’s a such big satisfaction!
Chiara: Have you ever thought of sharing your recipes via a blog? Your food is great!
Federica: Thank you! Yes, I have been thinking about it. Today I feel I am ready to share my recipes and I will create one soon.
Chiara: What’s your favourite gluten free food?
Federica: The best gluten free food of my life is the tortellini made by my grandmother. I can’t find anything better!

Federica: Information, creativity, passion and…life!
Chiara: If you have to convince someone who does not have a gluten intolerance to eat gluten free, what would you tell him?
Federica: I would tell him that is gluten free only after he ate it, so he realises how good it can be without any prejudice!
