Today I am very happy to introduce you another blog that I love, Una tavola per tutti, animated by the sparkly, super talented, gluten free Italian cook Simona! I love her blog so much, her photos are amazing and her recipes…oh my…! I literally fell in love with her and started to follow her on a regular basis. It’s so nice for me that today we have created a bridge between us, from Paris, where I live, to Catania, in Sicily, Simona’s hometown, thanks to gluten free! The recipe that she shares with Baci di Dama is cookies with pistachio, super easy, super tasty, I can tell 😉

INSTRUCTIONS
Crak the egg. Separate the yolk from the white.
Beat the yolk with the sugar; add one tablespoon of cold water and keep beating.
Beat the white to stiff peak.
Start adding one spoonful of egg white and one of pistachio flour to the yolk + sugar mixture. Mix them and continue to add the ingredients by alternating one spoonful of each at a time.
Add the lemon zest and the vanilla essence (you can also use one bean or vanilla as a powder). Mix one more time until you get a smooth mixture.
Take a baking tray, put some grease proof paper on it.
Pour the mixture in a a pastry bag, make small balls the size of a walnut. Sprinkle some pistachio crumbles all over them.
Pre-heat the over to 170° and bake for 15 minutes.
Be careful to keep an eye on them, the cookies will cook quite quickly and they will stay soft inside.
Melt the dark chocolate at “bain marie” and decorate with the help of a fork.
Finish with some icing sugar on top.

Ingredients
Recipe for almost 20 cookies :
– 100 gr pistachio flour
– pistachio crumbs to taste
– 80 gr cane sugar
– 1 egg
– 1 tablespoon of cold water
– the zest of one lemon
– 1 coffeespoon of vanilla essence
– dark chocolate and icing sugar to taste
