Chocolate chips cookies

Today I am very happy to introduce you a new collaboration with one Italian blog that I love: Due amiche in cucina by Miria Onesta. Miria cooks also gluten free and that has become a challenge and a passion for her. She is one inspiring woman, I can tell, and for Baci di Dama, she has chosen to share one of her favourite gluten free recipes: chocolate chips cookies with orange zest. Yummy !

INSTRUCTIONS

STEP 1

Sift all the flour and the starches. Dispose them on a kitchen-working table, create a hole in the middle where you add the sugar and the cold butter, previously cut into small cubes.

STEP 2

With your hands mix the butter and the sugar first until they becomes crumbs.

STEP 3

Add the egg, the orange, mix them to the crumbs and starting adding the flour and starches little by little.

Add the chocolate chips.

STEP 4

Now that you have obtained homogenous pastry dough, put it in a food wrap and then in the fridge, to rest for a couple of hours.

STEP 5

Pre-heat the oven to 180°.

STEP 6

Take two baking pans and dispose some greaseproof paper on both of them.

Take the pastry dough out of the fridge and roll it.

Now choose the mould and the shape you like the most for your cookies.

Dispose the cookies on the baking pan and then in the oven for about 10-12 minutes.

Let them cool down before serving.

– 100 g tapioca starch
– 130 g corn flour – “fioretto” variety
– 35 g corn starch
– 100 g butter
– 100 g sugar
– 1 egg
– 1 level coffee spoon of carob flour
– 50 g chocolate chips
– the grated skin of one fresh orange
