Delicious gluten free bread with natural sourdough!

Since I was diagnosed with celiac disease almost twenty years ago, what I missed the most was fresh bread and yummy pizza.

I still remember the feeling when I bit into some “plastic” bread for the first time in my life and some “chunky” chewy pizza…For the Italian that I am, I have to confess, I shed a few tears to the glorious food that I thought I had lost forever …

Luckily, after all this time, gluten free foods have so much improved that I take a real pleasure eating them especially when I tried the delicious gluten free bread made with natural sourdough at Au Pain Naturel in Lyon: their 100% corn bread is the best gluten free bread that I have tasted so far!

The crust was perfect, fluffy and soft, the taste was great…I could hardly believe that it was gluten free and yet it was, as they told me after my many questions as I have never seen a bread like that!

At Au Pain Naturel I met with Catherine, the owner: she is one smart, lively, funny woman, we chatted for a while and exchanged about gluten free foods (hope she will sell my Italian artisanal pasta someday soon) and holidays in Italy (she is a big fan of the country where I was born).

The second gluten free bread on sale here is the 100% chestnut flour: I bought it too and tasted it later.

It was ok but nothing compared to the glorious corn bread!

I ate it at home in all the possible ways: with greens, mozzarella, avocados, eggs, it is still so rare to find such a great gluten free bread that when I do find it, I dig in with the greatest of pleasure!

The bakery is not 100% gluten free so cross contamination with gluten is possible: I am celiac and I didn’t have any problem; Catherine takes great care to avoid it but the choice is personal and nobody knows better than us what’s the best for our body and for our wellbeing.

However this bread deserves the detour 🙂
