Welcome to the new Healthy Bistrot in Paris!

Today my friend Soraya from Gluten free in Paris and I decided to head to the new place to be in town, a healthy bistrot located close to the famous Sacré Cœur church: the Abattoir Végétal.

I have to confess that the name intrigued me a lot… in French the word “abattoir” means slaughterhouse and “vegetal”, well, I would say green in this case, a green slaughterhouse…how unique is that, I thought!

Ava and her husband Bastien, co-founders, tell me that they opened up this half coffee shop half bistrot where an ancient butcher’s shop was previously located.

Their objective with the Abattoir Végétal is to propose food that is local, organic, vegan and vegetarian. Gluten free options are also included in the menu.

Everything is cooked fresh everyday by their talented chef Ambre Sabbagh who previously worked at Soya restaurant, a very well-known vegan place in Paris.

The moment I stepped in, I could feel the word “vegetal” gently fluttering everywhere: it was in the big windows that let the milky Winter light that I so much love gets in, the bright design, the pastel colours of the chairs and the lovely round tables, the beautiful flowers that were scattered a bit everywhere.

To me it looked like a peaceful oasis in the middle of the Parisian urban jungle.

The three of us, including Soraya’s smart and lovely son Sandro, chose as drink a matcha latte, hot chocolate and a latte. We loved our choice. My matcha was made with almond milk but Ava told me that she can make it also with coconut mink….hmm, again I am intrigued ! Something new to try for my next visit.

Everything is not gluten free: the falafel I took a photo of have wheat for example but as I have celiac disease, I could choose a whole 100% gluten free menu which included hot soup and a delicious main veggie course, so colourful and tasty! I did appreciate each bite.

There are several other options here which include desserts, toasts with gluten free bread by Parisian artisanal baker shop Chambelland, energy bowls, freshly pressed cold juices and smoothies, organic wine and champagne.

Ava and Bastien’s project aim to support local producers who supply quality products: at the Abattoir Végétal you can find herbal teas by French brand Chic des Plantes, coffee brewed by Coutume, honey from Hédène , jams from the Confitures Parisienne or matcha powder from Umami.

Before leaving Bastien tells me that together, they have travelled and worked everywhere in the world for years: they have been inspired by so many different countries, cultures and flavours that their new project mirrors all of these influences.

Differences can definitely make us richer and widen our minds.

Today they have decided to come back to France and live in Paris: with the opening of the Abattoir Végétal almost three months ago, they have started to write a new chapter of their life story that I happy to follow and to support!
