
Millets are a group of small, round seeded cereal grains thought to have originated in Western Africa. They have been important food staples throughout human history and have been cultivated in East Asia for the last 10.000 years. In fact, these ancient grains pre-date wheat and rice as cultivated grain. Nutritionally millet is gluten-free, easy to digest, and a good source of manganese, with a moderate amount of dietary fibre. It is available as millet grain (hulled), millet meal, puffed millet and millet flour. It works beautifully with ingredients such as lime, chilli, herbs and spices. It can be used in salads, couscous, pilafs, as a breakfast cereal, added to soups and stews. *
